1 small zucchini
Grated 1/2 romano or asiago cheese
Grated 1/4 cup flour
1/2 tsp oregano
1/4 tsp garlic powder
1 egg, beaten
1/4 cup parmesan cheese, grated
1/2 tsp salt
A few twists of black pepper
1 tablespoon olive oil
Combine all ingredients except oil.
Heat oil in pan.
Drop dollops of zucchini mixture into pan. Flatten with a spatula and cook about three minutes on each side until golden.
Serve with sour cream, if desired.
